Single-Origin Praliné Collection

Single-Origin Praliné Collection - Main image
$43.4 $70 In stock

Fifteen house-made Pralinés showcase five distinctive chocolate origins, each melded with a complementary, sweet-savory nut or seed pâte. Head Chocolatier Nicholas and our Confections team craft a decadent, textural Collection that is sweet and salty, crisp and rich, nutty and piquant.

Praliné — an infinitely variable pâte (paste) of ground nuts and sugar — is one of our favorite chocolate pairings. Here, Nicholas and team draw inspiration from the humble peanut-butter cup, on up to enticing wine-bar provisions. The resulting five Praliné varieties, enhanced with flavorful accent ingredients (such as piment d’espelette, and Linea Caffe organic Colombian coffee beans), harmonize with five chocolate origins in perfect balance.

The dark chocolate origin with the hazelnut pâte was my favorite—you can really taste how the sweet-savory combo shifts with each of the five origins. The boxes are a bit small for the price, but every piece felt like a tiny, deliberate treat.

I bought these for a dinner party and the five-origin tasting turned into a whole conversation. The pralinés are noticeably small-batch — the shell snaps clean and the nut pâtes taste freshly made, not like the waxy stuff from the grocery aisle. The sweet-savory pâte inside the pralinés is what got me — the nut and seed fillings keep each piece from being just another sugary chocolate. You can actually taste the difference between the five origins, which surprised me since I usually can't tell dark chocolates apart.
